Sweet Potato Fries with a Dill Cashew Dip.

I was blissfully unaware about the true magic of dill until I started watching Sarah Nagel's YouTube videos (aka holistic habits). She often finds ways to incorporate fresh dill into her recipe videos professing it is her favorite herb. After watching all of her videos I decided to buy some fresh and see for myself. Once I tried fresh dill for my first time I too fell in love! Basil will always forever be my favorite herb, but dill is definitely one of my favorites as well. This recipe came into my mind, because I often make sweet cashew frosting and thought that maybe a savory cashew dip would be a great staple recipe, since I already have so many cashews in my cabinet on hand.
Sweet potato fries pair well with this dip, because the sweetness of the fries helps to balance out the savory flavor of the dip. This recipe is addicting and so simple to make. If you do not have fresh dill on hand, you can use dill powder, meaning this recipe could literally just consist of ingredients from your cabinet, which is convenient if you have very little produce in your refrigerator, which even happens to me, a savvy food blogger!
Dip
--- Ingredients ---
1 & 1/2 cups cashews
2 tsps fresh dill
1 tsp garlic powder
1 tsp onion powder
sea salt to taste
Step 1:
Soak the cashews in 4 cups of water overnight.
Step 2:
The next day drain most of the water, except for 1/2 cup of water. Blend the water, cashews and all of the rest of the ingredients. The dip should be a little bit thinner than the consistency of a hummus.
