Black Bean Hummus/Salad Dressing

One day I was in the kitchen making my regular black bean hummus recipe to have in my refrigerator throughout the week with my lunches. To my dismay I made the hummus too runny and it no longer resembled a thick dip and I had no more cooked black beans to add to thicken the hummus. I decided to drizzle on my salad as a dressing, and wow was I surprised! Hummus as a salad dressing tasted incredible and I was instantly overwhelmed with happiness.
If you try this recipe, but still don't like the concept, then simply add more black beans and turn it into a thick hummus for dipping. You might surprise yourself and like this recipe though, so I suggest that you try it!
Servings: Toss in one large salad that can serve 5-7 people or use throughout the week as a salad dressing for yourself.
--- Ingredients ---
3 cups cooked black beans
1/2 cup extra virgin olive oil
1/2 tsp sea salt
4 cloves garlic
2 lemons
4 tsps tahini
1/2 cup water
Step 1 ---
Either open cans of black beans or soak and cook dry black beans. Then remove the skins from the garlic and squeeze the juice of the lemons. Add the lemon juice, peeled garlic and rest of the ingredients into a blender on high speed. I suggest a blender instead of a food processor to fully blend all of the ingredients.
